Strawberry Sandwiches

Always a hit, espeically in the early summer when strawberries are ripe and sweet! The tangy goat cheese and sweet strawberries are an amazingly delish combo! 

Ingredients

  • 1 Goat cheese, room temp
  • 4 Thinly sliced strawberries
  • 1 Red pepper jelly (or strawberry)
  • 1 Baby spinach
  • 1 Toasted pecans, finely chopped
  • 1 Toasted baguette slices

Directions

Lightly toast baguette (or bread) slices till light brown. Spread a layer of softened goat cheese. Top with jelly, then strawberries and fresh spinach. Sprinkle with toasted pecans.
