This is a delightful first course or appetizer. Light, refreshing and elegant. 

Crab, Mango, Pepper and Avocado Salad

Ingredients

  • 8 oz Lump Crab Meat
  • 1 Avocado, Chopped
  • 1 Mango, Chopped
  • 1 Red Pepper, Seeded and Chopped
  • 4 Garlic Cloves, Minced
  • 2 Tbl Chives, Minced
  • Pinch Kosher Salt and Freshly Ground Pepper
  • 2 Tsps Ground Cumin
  • 2 Tsps Hungarian Paprika
  • 2 Tsps Harissa Paste
  • 2 Tbl Extra Virgin Olive Oil
  • 2 Tbl Lemon Juice
  • 2 Tbl Cilantro, Chopped
  • 2 Tbl Italian Parsley, Chopped

Directions

Combine all the ingredients in a mixing bowl. Adjust seasoning to taste. Chill completely for one hour prior to serving.
