Pumpkin Apple Streusel Muffins

6 large or 18 smaller muffinsIngredients
- 2 ½ c. flour
- 2 c. sugar
- 1 T. pumpkin pie spices
- 1 t. baking soda
- ½ t. salt
- 2 eggs, lightly beaten
- 1 c. solid packed pumpkin meat
- ½ c. vegetable oil
- 2 c. finely chopped apples
Directions
Bake: 350 F for 40-45 minutes
Grease 2 large muffin tins. In large bowl combine first 5 ingredients, set aside. In medium bowl, combine eggs, pumpkin and oil. Add liquid ingredients to dry. Stir until just moistened. Stir in apples. Spoon batter into muffin cups, filling 3/4 full.
Streusel Topping:
2 T. flour
¼ c. brown sugar
½ c. coconut
½ t. ground cinnamon
4 t. butter, room temperature
In small bowl combine flour, sugar, and cinnamon. Cut in butter and then coconut until crumbly. Sprinkle over muffin batter. Bake 40-45 minutes or until wookpick comes out clean.
Variation:
Makes 18 smaller muffins. For muffins reduce baking time to 35-40 minutes.
