Hot Fiesta Spinach Dip
From CASA SEDONA BED AND BREAKFAST INNDirections
1 cup chopped onion
1 cup salsa
1 10 oz pkg. Chopped spinach, (thawed and squeezed dry)
2 1/2 cup grated Jack cheese
8 oz cream cheese, cubed
1/2 cup sliced black olives
1 cup chopped pecans
Combine onion, salsa, spinach, 2 cups cheese, cream cheese and olives.
Transfer to serving dish and top with pecans.
Bake about 30 minutes at 400 degrees until hot and bubbly.
Top with remaining cheese. Serve hot.
