Pineapple Coconut Muffins
From CASA SEDONA BED AND BREAKFAST INNDirections
1 3/4 c. flour
1/2 c. quick oats
1 c. flaked coconut
1/2 c. brown sugar
2 t. baking powder
1/2 t. baking soda
1 1/2 c. pineapple juice
1/2 c. applesauce
1/4 c. butter, melted
1 egg
1 t. vanilla
In a large bowl, combine first six items, in a separate bowl, blend remaining ingredients until smooth then fold into dry ingredients until just moistened. Spoon into greased mini-muffin tins. Bake at 350 degrees for 25 - 30 minutes. Makes 24 mini-muffins.
