Apple Cranberry Cake

2 eggs 1 1/4 cups sugar 1/3 cup vegetable oil 3/4 cup all-purpose flour 3/4 cup oatmeal 1/2 tsp salt 1 tsp baking soda 1 tsp cinnamon |
1/4 tsp nutmeg 1/3 tsp allspice 1/2 cup coarsely chopped cranberries 2 medium apples, peeled and grated 1 medium pear, peeled and grated 1 cup coarsely chopped walnuts Powdered sugar, whipped cream or vanilla ice cream |
Preheat oven to 350 degrees.
Lightly beat eggs, then beat in sugar until creamy. Stir in oil.
Toss together flour, oatmeal, salt, soda and spices. Mix thoroughly with eggs and sugar mixture. Fold in fruits and walnuts.
Scape batter into greased 9"x9" inch cake pan and bake for 45 minutes.
Serve warm or room temperature with sugar, whipped cream or ice cream.
