Autumn Pancakes

A delicious fall treat that combines tart apples with the warmth of cinnamon and nutmeg


  • 1/2 Cup Quick Oatmeal
  • 1 1/2 Cups Boiling Water
  • 1 1/2 Cups All-purpose flour
  • 2 tsp. Baking powder
  • 1/8 tsp. Salt
  • 3 Tbsp. Sugar
  • 1 tsp. Ground cinnamon
  • dash Nutmeg
  • 1 Large egg, beaten
  • 1 Cup Milk
  • 1 Large apple, peeled, cored, and coarsely chopped
  • 1/4 Cup Chopped walnuts
  • 3 Tbsp. Melted butter


Place oatmeal in a small bowl.  Pour boiling water over and let stand for 5 minutes.  Do not drain. In a large bowl, combine flour, baking powder, salt, sugar, and cinnamon.  Add oatmeal, egg, milk, apple, nuts, and melted butter and mix well. Thin as needed.  Preheat a large non-stick griddle or skillet over medium-high heat.  Lightly spray or brush with vegetable oil.  Pour ¼ cup batter onto griddle for each pancake.
