Crustless Bacon & Egg Quiche

Oven: 350°
Serves: 4-6
8 strips bacon (or 1 Tbsp Bacon Bits)
1 1/2 cups milk
Dash of pepper
1/2 cup prepared biscuit mix
1 cup shredded Cheddar cheese
1/4 cup melted butter
3 eggs
- If you use bacon, fry until crisp; crumble and set aside.
- In blender, combine milk, biscuit mix, eggs, butter and pepper.
- Pour into greased 9" pie pan.
- Sprinkle bacon and cheese on top of egg mixture, gently press below surface with a fork.
- Bake at 350° for 30 minutes or until knife inserted halfway comes out clean.
