Pecan Granola

The cardamom gives a peppery, spicy hint to this very nice granola. Definitely for pecan lovers. Use on yoghurt with fruit.

Directions

3 cups old-fashioned oats (not quick oats)
1 cup coarsely chopped pecans
1 tsp. ground cinnamon
1/2 tsp. ground cardamom
1/4 tsp. salt
1/2 cup packed brown sugar
1/4 cup very hot water
2 tablespoons salad oil (vegetable oil)
1 tablespoon vanilla extract
1 cup dark raisins

 

Preheat oven to 300. Using butter-flavored cooking spray and heavily spray the bottom of one large baking pan. Mix oats, pecans, spices, and salt in medium mixing bowl. Combine hot water and brown sugar in small mixing bowl and stir until sugar is dissolved. Stir in vanilla and oil. Mix brown sugar mixture into oat mixture in large bowl until well blended. Spread out oat mixture onto baking sheet and bake in preheated oven for 10 to 15 minutes being careful not to burn the mixture. Stir granola and cook for another 5 to 10 minutes until well toasted. Remove granola from oven. Stir the granola while still warm and then let cool. Stir in raisins. Store in an airtight container for two to three weeks.
