Joyce's Macadamia Waffles
From BRIERLEY HILL BED AND BREAKFAST| Serves 12 | |
| 3 | Eggs, separated |
| 1 1/2 | Cups buttermilk |
| 1 | tsp baking powder |
| 1/2 | Cup butter, melted |
| 1 | tsp baking soda |
| 1 | tsp vanilla extract |
| 1 | Cup sour cream |
| 1/4 | Cup sugar |
| 1/2 | Cup chopped nuts (pecan, macadamia, etc) |
| 2 | Cups all-purpose flour |

In a medium bowl, beat the egg whites until stiff. Set aside. In a large bowl beat the remaining ingredients together. Fold in the egg whites. May be prepared the night before and refrigerated. Pour into a hot waffle iron that has been greased and bake. Serve waffles with fresh fruit and whipped cream. |
