Couscous Baked Eggs

From BRIDGE CREEK INN BED & BREAKFAST
Makes 6 servings. Preheat oven to 425 degrees

1 c of uncooked coucous, cook according to pkg directions
1 c whipping cream, whipped but not sweetened
9 mushrooms, sliced and cooked in a little butter, (microwave for 1 min) a little grated Swiss cheese
Nutmeg

Divide cooked coucous into 6 ramekins or pyrex dishes
Divide mushrooms equally and mix into coucous
Divide whipping cream onto coucous mix, make a well in the center for egg
Break egg into depression, sprinkle slightly with salt, Put a little grated cheese and nutmeg on top of each
Cook for about 12-14 mins. If you wish yolk hard, 14-15mins. Serve warm.

I garnish with sprigs of fresh rosemary and complete the meal with hashed brown potatoes and muffins of various types.
