Farmer's Breakfast

Serves 2-4

3 baked or microwaved potatoes, skinned and diced
1/2 green pepper
1/2 small onion
8 ounces cooked bacon
4 ounces grated cheddar cheese
4 eggs

Cook potatoes and bacon, dice pepper and onion.

Coat bottom of 9' skillet with bacon grease, cook pepper, potatoes and onion until browned on one side, turn add salt and pepper to taste - add bacon grease as needed.

Crack eggs over and cover skillet. Cook eggs until "set". Top with bacon. Top with cheese and allow to melt.
