Peach Kuchen

Ingredients

  • 1/2 cup butter, softened
  • 1/4 cup sugar
  • 1 tsp. vanilla
  • 1 egg
  • 1 cup flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 28 oz can sliced peaches, well drained
  • 3 tbsp. sugar
  • 1/2 - 1 tsp. cinnamon

Directions

Heat oven to 350 degrees. Grease 9 inch spring form pan. In small bowl, beat butter and sugar until light and fluffy. Add vanilla and egg and beat well. Lightly spoon flour into measuring cup; level off. Add flour baking powder and salt to butter mixture; blend well. Spread dough over bottom and 1 inch up sides of pan. Arrange peach slices in spoke fashion over dough. Sprinkle with sugar and cinnamon. Bake at 350 for 30 to 35 minutes or until edges are golden brown. Cool 10 minutes; remove sides of pan.

Comments: This makes a beautiful presentation. You can do other fruits or open a can of prepared pie filling and use it instead of the peaches.
