Apple Cheddar Bread Pudding

From BREAKFAST ON THE CONNECTICUT
4 eggs
2 cups whole milk
1 cup sugar
3 T butter, melted
¼ t. cinnamon 7 slices firm white bread (crusts removed, cut into cubes)
1 large apple (peeled, cored, cubed)
2/3 cup grated cheddar cheese

Maple Butter Sauce:
1 stick butter
1 cup maple syrup
¾ t. cinnamon
½ t. allspice

Oven to 350. Butter an 8 inch square pan. In large bowl whisk eggs. Add milk, sugar, butter cinnamon and salt. Whisk again until sugar is dissolved. Add bread, apples and cheese - gently stir to combine. Put in dish - bake 25-35 minutes until golden and set all the way through. Dust with additional cinnamon and serve with Maple Butter Sauce.

To make sauce - in small saucepan over medium low heat, melt butter. Add maple syrup and cook whisking occasionally until butter blends with maple syrup and sauce is slightly thickened. Serve warm over bread pudding. Top with whipped cream.
