Swedish Pancakes

From BLUE MOUNTAIN BED AND BREAKFAST

Directions

1 1/4 C. Flour
6 T. Sugar
6 T. Melted butter
5 Large eggs
3 C. Milk (preferably whole)

Heat large, flat griddle to 350 degrees (you may have to play with the temperature a bit).
Mix eggs, sugar, melted butter and flour with just 1 cup of the milk until smooth. Beat in rest of milk. Stir batter between each batch. 

 

Fry until bubbles appear on top and batter has set, gently flip over and fry for another 20-30 seconds until edges of underside are slightly brown. Roll up and serve, sprinkled with powdered sugar. Swedish Pancakes are meant to be extremely light and thin like a crepe. We serve with home made jams and jellies, delicious!
