Spinach

Ingredients

  • 1 16 oz. package chopped spinach, thawed and drained well
  • 4 Tbs. butter
  • 3 eggs
  • 1 cup all-purpose flour
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 3/4 pound aged cheddar, grated

Directions

This versatile dish is actually a crustless spinach quiche, but we all know that "real" men don't eat quiche so we call this Spinach Brownies. It can be served as a breakfast entree, an accompaniment to a breakfast entree, or as an hors d'oeuvre.

 

Preheat oven to 350 degrees.
Melt butter in a 9X13-inch glass baking dish
In a mixing bowl, beat the eggs, and add the milk. Beat together.
Mix the flour, salt, and baking powder together and add to the egg-milk mixture. Stir until well mixed.
Add the cheese and spinach. Stir to incorporate.
Transfer the mixture to the pan.
(At this point, you can refrigerate the "brownies" for up to 24 hours or freeze for several weeks.)
Bake at 350F for 35 minutes (longer if chilled) or until the top is lightly brown.
Cool slightly.
Cut into large triangles if using as an entree; small triangles if using as an appetizer.
