White Chocolate Chip Coconut Cookies

1 cup unsalted butter, softened
1 cup white sugar
1 cup brown sugar
2 teaspoons vanilla extract
2 tablespoons milk
2 eggs, lightly beaten
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
2 ½ cups flour
12 ounces white chocolate, chopped into chunks
1 ½ cups chopped pecans
1 cup packaged coconut

Preheat oven to 350 degrees.

Cream the butter with the brown and white sugar in a mixer (it's too hard to do by hand). Add the vanilla, milk, and eggs, beating until light and fluffy.

Add flour, salt, baking soda, and baking powder to the creamed mixture and beat to combine. By hand, stir in the coconut, white chocolate chunks, and nuts.

Lightly oil cookie sheet. Scoop dough with Italian ice cream scoop in about 1" balls on sheets. Bake for 12 minutes. Let sit on sheets a minute, then remove to cooling racks.

Makes about 5 dozen cookies
