Jammy Muffins

  • ½ cup butter
  • ½ cup sugar
  • 1 egg
  • 1½ cups flour
  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup milk
  • ½ cup chopped pecans (optional)


Your favorite jam (we love red plum or raspberry)
Cream together butter and sugar; add egg. Mix dry ingredients. Add to butter mixture alternately with milk. Add nuts if you wish. Line muffin tins with paper baking cups. Spoon about a tablespoon of batter into cups and create a "well" in the center with your spoon. Drop a tablespoon of jam into "well." Cover the jam with the remaining batter. Bake at 350 for 30-35 minutes. Butter while hot. Try not to eat them all before you get them to the table!
