Pineapple Ham Breakfast Quiche

This breakfast quiche is always a hit.

It can be prepared the night before but is best cooked right after preparation.

We serve it with bacon and some kind of fruit.


  • 1 ready made pie crust
  • 1 cup shredded hash browns (frozen)
  • 1/2 cup cubed ham
  • 1 8 oz. can pineapple chunks or tidbits
  • 1/2 cup shredded cheddar cheese (or your favorite)
  • 5 large eggs
  • 1/4 cup milk
  • 1 dash salt


Pre-heat oven to 360 degrees.

Place the pie crust in a regular pie pan.

Place one layer of pineapple across bottom of pie crust.

Sprinkle pineapple layer with ham all across bottom of pie crust.

Just barely cover previous layers with a thin layer of frozen hash browns.

Sprinkle half of the cheese over layers.

Repeat the three layers of pineapple, ham, and hash browns.

Mix eggs, milk, and salt until thouroughly scrambled and pour mixture over all layers.

Cook in 360 degree oven for 1 hour, turning and moving from

center to bottom rack, every 20 minutes.

Sprinkle the rest of the cheese on top and let melt for last 10 minutes of cooking time.

Let cool for 5 minutes and cut into 6 or 8 pie shaped slices.

Serve with your favorite picante or salsa.
