A Spicey Fall Treat!

Fall Apple Upside Down Cake

Ingredients

  • 4oz butter
  • 1 1/4 cups sugar, divided -1/2 cup and 3/4 cup
  • 4 medium apples - preferably Golden Delicious or Braeburn
  • 3/4cup flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 tablespoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon allspice
  • 1/3 cup cornmeal
  • 1/2 cup boiling water
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/3 cup whole milk

Directions

Preheat oven to 350osF. Butter side of cake pan. Line the pan with parchment paper allowing paper to come up the sides of the pan. Butter the parchment paper.

 

Melt 2 Tablespoons of butter in a skillet.  Add 1/2 cup sugar and cook until sugar dissolves and mixture turns brown - 5-6 mins.  Cut apples into wedges after peeling and distribute in skillet.  Cover and cook for 12-15 mins until apples are coated.  Put in prepared cake pan.

 

Mix tog. flour, salt, baking powder and spices. Place cornmeal in a large mixing bowl. Pour in boiling water and stir. Add 3/4 cup of remaining sugar and 6 tablespoons of butter. Beat. Beat in eggs and vanilla. Add flour mix to egg/cornmeal mix and pour batter of apples.

Bake about 40 mins.  Cool for 5-10 mins. Run a knife around pan to loosen sides and invert cake onto a plate. Remove the parchment paper.
