Lemon Poppy Seed Cake (low fat)
From ANCHOR INN BED & BREAKFAST

1 pkg. lemon cake mix with pudding
1 cup water
1/3 cup apple sauce
6 egg whites or egg beaters to = 3 eggs
2 T. poppy seeds
Mix together and pour in 10" tube or 12 cup fluted Bunt pan. Bake 350 degrees for 35 - 45 min.
When cool - Glaze with:
1 cup powdered sugar
1 T. lemon juice
1 T. skim milk
2-3 drops yellow food coloring
Sprinkle poppy seeds on top of glazed cake.
