Mexican Bake


Cooking Time:

45 to 50 minutes


  • 10 eggs
  • 1 cup milk
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp garlic salt
  • 1/2 can kernel corn
  • 1/2 can black beans
  • 1 can Rotel diced tomatoes and chilis for fresh tomatoes
  • 1 lb ground turkey/sausage
  • 1 1/2 tablespoon taco seasoning
  • 1/4 cup water
  • 4 tortillas
  • 1 cup shredded cheese


Brown ground turkey or sausage and drain grease. Add water and taco seasoning and stir, bringing to a simmer until water is absorbed, about 10 mintues. Let cool. Mix eggs, milk, salt, pepper, garlic salt and set aside.
Grease a 9 x 13 inch pan and lay four tortillas in the corners with some over-lap and taking a knife, run it along the edge of the pan to make square edges. Drain and rinse corn and beans and spread evenly over tortillas. Drain Rotel diced tomatoesand chilis and spread over beans and corn, next spread cooled turkey. Add a cup of cheese and pour in egg batter.

Bake at 350 degrees for 45 - 50 minutes, or until eggs are well set.
