Artichoke Frittata

Ingredients

  • 1 lb. fresh mushrooms, sliced
  • 1 cup chopped onion
  • 1 tablespoon vegetable oil
  • 2 10-ounce packages frozen spinach
  • 8 large eggs
  • 2 6-ounce jars marinated artichoke hearts, drained
  • 1 1/2 cups grated sharp Cheddar cheese (6 ounces)

Directions

Slice mushrooms and saute with onions in oil. Thaw spinach and drain well. (Allow 3 to 4 hours for spinach to thaw and drain.) Beat eggs lightly and combine with mushrooms, spinach, artichoke hearts and cheese. Bake covered in buttered 1 1/2 quart casserole at 350 degrees for 45 minutes.
