Berry Corn Muffins



Makes 10 regular sized muffins


1 1/2 cups all purpose flour
3/4 cups cornmeal
1/2 cup white sugar
4 tsp baking powder
1/4 tsp salt
Zest of one lemon
1 1/2 cup fresh or frozen berries
1 large egg beaten
1 cup of milk
1/4 cup of canola oil
1 tsp vanilla


Preheat oven to 400 degrees.

In large mixing bowl combine flour, cornmeal, sugar, baking powder, salt, and lemon zest. In a separate bowl combine 2 tbsn of this mixture with the berries.

In a large measuring bowl whish together the egg, milk, oil, and vanilla.


With a rubber spatula, fold the wet ingredients into the dry ingredients and stir only until the ingredients are combined. Gently stir in the berries. Do not over mix the batter or tough muffins will result.


Evenly fill muffin cups with batter and sprinkle white sugar on top. Bake until lightly browned on top, approximately 20 minutes.
