Vegetable Strata

This hearty strata is a great start to any day - especially a busy Saturday when you have a ton of errands to run. This dish will keep you going until dinner.

12 slices bread (a good white bread is best)
1 bunch green onions
1 cup mushrooms, sliced
4-5 small zucchini, sliced
1-2 cups cheese (cheddar or any kind you like)
12 eggs
3 cups milk
1 Tbsp Tabasco
Crushed Corn Flakes

Cut crusts from bread and place in bottom of 9"x12" greased pan. Six slices usually fit.

Sauté onion, mushroom and zucchini*, put on top of bread slices, cover with grated cheese. Put remaining bread slices on top. Cover with remaining cheese.

Beat together 12 eggs, milk, tabasco, salt and pepper. Pour over casserole. Top with crushed corn flakes. Cover with foil and refrigerate overnight.

Bake at 350 degrees for 1 hour. Remove foil after 30 minutes.

Serves 8-10 people

Serve with salsa.

*You can use any meat or veggies you like.

Note:If you want to freeze this recipe, leave out the eggs and milk and add when defrosted. Then put in fridge to soak overnight.
