Vegan Pancakes

From THE MERMAIDS' PORCH BED AND BREAKFAST

Ingredients

  • 1 Tablespoon Oil
  • 1 1/4 Cup Flour
  • 2 Tablespoons Sugar
  • 2 Teaspoons Baking powder
  • 1/2 Teaspoon Salt
  • 1 1/4 cup Water

Directions

Optional: vanilla, cinnamon, blueberries

 
1. Sift flour, sugar, baking powder and salt into large bowl

2. Whisk the water and oil together in a small bowl

3. Make a well in the center of dry ingredients and pour in the wet

4. Stir until just blended--will be lumpy 

5. Heat lightly greased griddle over medium high heat

6. Drop batter by large spoonfuls on griddle and cook until bubbles form on edges 

7. Flip and cook until browned on other side
