Green Chile Potato Tart

4-5 new red potatoes
2 tablespoons olive oil
1/4 cup chopped onion
2 cloves garlic, minced
1 can ( 4 oz) chopped green chilies
5 eggs
1 cup shredded Monterey Jack Cheese
1 cup shredded Cheddar Cheese
Pinch crushed red pepper
1/4 teaspoon salt
dash pepper
sour cream

Preheat oven to 375 degrees.

Slice potatoes into 1/4 inch slices. Boil until soft, but still firm. In skillet saut? onion and garlic in olive oil until soft; remove from heat and add green chiles.

In large bowl beat eggs; stir in vegetables, seasonings and cheeses.

Layer potatoes in bottom of greased 9-inch pie plan. Cover potatoes with half of egg mixture. Add another layer of potatoes. Top with remaining cheese. Bake 30-35 minutes until golden brown.

Serve topped with sour cream.
