Southwestern Eggs Benedict

4 poached eggs
4 slices Black Forest ham
4 roasted, peeled, and seeded Anaheim Chilies
(or substitute frozen but not canned)
2 English muffins
1 fresh tarragon sprig 		Sauce
1 TB butter
1 TB flour
1/2 cup milk
1/3 cup grated Cabot extra sharp cheddar

For the sauce: melt butter, stir in flour until blended, slowly stir in milk. When sauce is smooth and just coming to a boil, stir in cheese and continue stirring until cheese is melted. Season with salt if desired.

Lightly toast 4 English muffin halves and place on warm plates. Top each with one slice of Black Forest ham, one Anaheim chili, and one poached egg. Spoon sauce over top and garnish with fresh tarragon leaves.

Two large servings.
