Picnic Down the Blue Ridge Parkway - This Weekend, June 23-24 20 Jun 2012, 12:30 pm

It is going to be a beautiful weekend here in the Blue Ridge Mountains of Southwest VA. Why not spend it touring the Parkway with its scenic views while visiting the sites along the Mountain Road Wine Experience and enjoying picnic treats along the way? 

On Saturday & Sunday, Château Morrisette, Villa Appalaccia, Blacksnake Meadery, AmRhein Wine Cellars, and Foggy Ridge Cider collaborate in this unique driving and picnic event. A Favorite & Most-Requested Breakfast Recipe 4 Jun 2012, 2:34 pm

One of our all-time favorite breakfast recipes came from a magazine that a dear friend passed on to me for my enjoyment. The basic recipe was for Ham & Cheese Egg Cups. Of course, I have made my own adaptation and here it is.



Ham, Spinach and Cheddar Egg Cups
Prep Time: 5 Minutes
Cook Time: 15 - 20 Minutes   
Servings: 12
 
Ingredients:
12 thinly sliced pieces of VA ham
2 cups shredded sharp cheddar cheese
1 cup chopped fresh spinach
12 whole Eggs
Cavendar's Greek Seasoning, Salt & Pepper to taste

Preparation Instructions:
Preheat oven to 350 degrees. Spray muffin tin with cooking spray.
Press a slice of ham into each muffin cup. Place spinach into each cup on top of the ham. Add in some cheese to each cup on top of the spinach. Crack an egg on top of each cup and season with greek seasoning, salt and pepper. Bake for 15-20 minutes or until done to what you prefer for eggs! (I like the yolks to be just a little soft!) Remove ham egg cups from muffin tin and serve on a plate sprinkled with fresh herbs or chopped spinach & shredded cheese. YUM!

When I serve this recipe here at the Inn, I make a Cheddar Cream Sauce to drizzle on the plate and over the cups right before I serve them. Depending on the season, I will omit the spinach and use other ingredients. At times, I have sauteed the spinach and served it as shown in the picture above. The cups are also delicious served over roasted tomato slices fresh from the garden in the summer and topped with fresh basil.

It's just one of those great, versatile recipes that comes out perfectly delicious every time!

Back by popular demand is our Winter Wine & Romance Weekend Getaway. Surprise that special someone with a romantic getaway to the secluded Mountain Rose Inn in the Blue Ridge Mountains. This package includes:

Pet Adoption Day - Sun, Sept. 11 – 11:00 A.M. to 4:00 P.M.
Where else but Chateau Morrisette can you drink wine and listen to live music while you pick out a new pet? Dozens of dogs and cats will be at the winery's courtyard looking for new homes during their 5th annual Pet Adoption Day. Blackberry Wine Cake with Chateau Morrisette's Blackberry Wine 5 Mar 2011, 2:53 pm

This recipe was shared with me by Lesli who is on our team here at the Inn after she saw a bottle of Chateau Morrisette's Blackberry Wine on the Inn's table. It is a yummy and easy recipe that I like to make for afternoon dessert here at the Inn. One guest liked it so much that he ate 4 pieces in one sitting! I'm sure that some of you talented chefs could easily convert the cake mix into the needed ingredients so that it would be a completely made-from-scratch cake. And of course, the Blackberry Wine from Chateau Morrisette is only wine to use!


Blackberry Wine Cake

1 box white cake mix
1 box blackberry jello
4 eggs
1 cup vegetable oil
1 cup Blackberry Wine

Preheat oven to 355°. (Yes, 355° not 350°.) Mix cake mix & jello together. Add in slightly beaten eggs, oil & wine. Pour into greased bundt pan and bake for 45-55 minutes. Remove from oven and allow to cool on wire rack. Invert on cake plate and drizzle with glaze.

Glaze:
2 cups confectioners sugar
1/2 cup blackberry wine

I'm thinking a slice of cake sounds really good about now. Guess I'd better head to the kitchen. :)
