Perfect summer treat: Lime Sugar Cookies from the Texas Hill Country 14 May 2012, 10:56 am
Last weekend, at Star of Texas B&B, in honor of Cinco de Mayo, Jared and I hosted a Texas Tub Party. Basically, you show up with your favorite Texas beverage (Shiner Bock, Baby Blue, Brennan Vineyards wine, etc.) and we have tubs of ice to keep them cold, live Tijuana Brass music (courtesy of my father and uncle) and I make tons of delicious goodies. My Sugar Cookies with lime glaze were a huge hit! I made probably 5 dozen and almost all were eaten. We are serving the remainder in our rooms for guests arrival. Nothing is better than a deliciously soft and sugary cookie. So, I would like for everyone to enjoy my cookies! Here's the recipe:Becca's Sugar Cookies
1/2 C (1 stick) unsalted room temp butter
1/2 C canola oil (or whatever oil you want- although I don't think olive oil would be very tasty!)
1/2 C sugar
1/2 C powdered sugar
1 large egg from your chickens outside.. oh wait, that's just us ;)
2 teaspoon vanilla extract
2 1/2 C all purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt (or I suppose you could just use salted butter and omit the salt. It's whatever.)
Lime Glaze
Juice of 1 lime
Zest of 1 lime
Enough powdered sugar to make the icing a nice consistency for glazing (a few cups)
I don't always measure stuff.... sorry!
Beat the first 4 ingredients, add egg and mix thoroughly, add vanilla. Mix all dry ingredients separately then add to the rest and mix. Scoop out with a small ice cream scoop, or how ever you want to do it. I flatten these and generously sprinkle sugar on them. Bake on 325* for about 12 minutes and cool on wire rack. I like to place wax paper (or anything really) under them while they are cooling so that I can ice them and it will drip down onto the paper instead of making a huge sticky mess to clean up.
For the glaze, just mix all together until its a nice runny consistency and pour over cookies! ENJOY!

Hi! So I'm Becca, the assistant innkeeper and baker for the Star of Texas Bed & Breakfast. Now that we have taken things up a notch here at the B&B, with overhauling some of our rooms and making our packages more special with fresh homemade goodies, I've decided to start blogging so I can keep y'all up to date with what's going on in the kitchen! You may ask "Why do I need to know what's going on in the kitchen?". Well, let me tell you... There's a lot going on, that's why! From baking warm crusty artisan bread, to creating sugary confections for those coming to say their "I do's".With that being said, I think the best place to start my blogging affair is with cake! I love cake. I think most people do. You know what I love more than baking cakes? Decorating cakes! I don't draw or sculpt or paint very well... But I sure do like to decorate! I think it is an art in itself. So, when you come to the Star of Texas B&B to elope, you can expect a work of art made especially for you. Mmmm mmm mm. Too bad we can't frame it!

Wow the Texas wildflowers are so beautiful already, I have done a quick walk through on our property at Star of Texas Bed & Breakfast, a Texas hill country b&b, and have spotted way over a dozen different flowers already showing their beauty this year. If you love nature, then now is the time to hit the roads for a road trip and come see us. At Star of Texas Bed & Breakfast, on the Texas Wildflower Trail, we are going to have an incredible year for wildflowers. The wonderful winter rains have given the ground just what it needed to birth forth lots of bluebonnet plants, that will be bursting open any time with oceans of blue flowers.
Also, the Wild plum trees are in bloom and it smells so sweet, that when you take a walk on the trail and get a whiff of them, you stop and take several more deep inhales to enjoy the aroma. Some of the native plants are blooming now too. So make plans to come enjoy the beauty of the Texas back roads from Spring thru Summer for the Wildflower season.

We are so excited that Southern Living is going to include us, Star of Texas Bed & Breakfast, in their April issue. We had a great team of photographers come to do the shoot, Jody Horton Photography from Austin was creative and so professional. It was a pretty last minute deal, we had a call on Monday saying they would be here Wednesday, is that ok? So what was I going to say!!! So all hands on deck and we were ready to go when they arrived. It will be fun to see what pictures out of the hundreds he took will make the cut for the magazine. Be watching for the issue, it will come out in mid March.Don & Deb
