During the colder winter months the breakfast chef at The Sayre Mansion tries to come up with some new recipes that warm our hearts, fill up our bellies, and provide a rich sweet aroma throughout the mansion. One of these very recipes, our famous Orange Cranberry Waffle, was complemented so often that we dicided to share the recipe with everyone. Listed below are the ingrediants and instructions for this delicious recipe. Enjoy!!
Orange Cranberry Waffles:
- 2 cups Bisquick Mix
- 1 1/3 cups Milk
- 2 Tbsp Vegetable Oil
- 1 Egg
- Zest from 1 Orange
- Juice from 1 Orange
- 1 cup fresh Cranberries (sliced in half)
Mix all of the above ingrediants together and follow waffle maker directions. Top off the waffles with powdered sugar, and serve with butter and warm maple syrup.

Many people call Bethlehem the “The Christmas City” and anyone who has visited this special place instantly knows why. The Holiday Season has crept up on us this year quite quickly, but the aura of the Holiday Spirit has been floating around this quaint little city for some time now. This year, to kick off the beginning of the Holiday Season, Bethlehem was blessed with an unusually warm sunny Thanksgiving, and the staff and guests at the mansion could not have been happier. The Sunday after Thanksgiving marked a long standing tradition for the Mansion. As staff and family gathered, our mansion was turned into a winter wonderland of Holiday decorations. The tree in the Parlor Room has been trimmed, Christmas music now fills the house, the poinsettias are abundant, and the sweet aromas of Holiday baked goods are sure to fill our heads with dreams of sugar plums. We are thankful to welcome back familiar faces, which have become like extended family, as well as new guests to the Inn. It is joyful to see the excitement in their eyes every year as they enter this magical little corner of the world, and Bethlehem for the Holidays is sure not to disappoint. The Historic District offers the charm of an older town paired with an eccentric flare. During this time Main Street is decorated for the Holidays, Horse Drawn Carriage rides are offered, the Moravian Bookshop glistens with decorations, and the new addition of the German Open Air Market provides widespread Holiday Spirit. But let us not forget one of the main attractions for Bethlehem around the Holidays: Christkindlmarkt, which continues to provide a wide array of arts and crafts, performances, and great gift ideas year after year. Whether young or old Bethlehem is certainly a place that could fill anyone with Holiday Spirit, and The Sayre Mansion is thankful to be a part of this magical little city. It’s the start of a new year. Like many of you out there, as the clock struck midnight on New Year’s Eve, I resolved to take better care of myself this year. Eat right, exercise more – you know the drill. Personally, I’ve always found that starting the day with a healthy breakfast makes it easier to stay on track for the rest of the day. Following the advice of a nutritionist and a personal trainer, both of whom told me that one of the healthiest breakfasts to start the day with is a serving of oatmeal paired with dried fruit and nuts, has really helped. Luckily, The Sayre Mansion has THE BEST hot cereal recipe in the world. We call it Rustic Grains – a mix of rolled oats, steel cut oats, barley and wheat berries slow cooked to create a nutty, hearty, flavorful cereal. Top it with a mix of dried cranberries and pecans and you’ll start your day off energized and satisfied. The other great thing about this recipe is that it makes 10 portions – which means that you can make a batch at the beginning of the week, divide it into individual serving sizes, freeze it and reheat it throughout the week for a quick, no fuss, nutritious start to your day.

RUSTIC GRAINS
1 Cup steel cut oats 4 Cups hot water
1 Cup rolled oats
¼ Cup wheat berries 4 Cups milk
¼ Cup barley
½ tsp. salt
Soak the dry ingredients overnight in the hot water.
Cook the next day in the milk for 1 hour at a simmer.
Stir frequently. Add more salt if desired. Thin as desired.
Leftovers may be reheated. Will keep three days for reheating. Serves approximately 10. Recipe can be halved.
