We are not newcomers to innkeeping, having entertained many guests from around the world at Kokoke Lani Bed & Breakfast Inn in Kailua-Kona, Hawaii for a number of years before selling it to move back to the mainland. Terry built the two homes on the property that became the inn, overlooking a 180 degree view of the blue-green Pacific. Truly a master of all trades, Terry has built eight houses in his lifetime, owned the Orchid Isle Appliance Service Co. in Kona as well. He lived in Hawaii for 15 years.
Being the chef at Kokoke Lani allowed me to be very creative. The abundance of fine foods with which to create the dishes we served our guests seemed endless. 300 white pineapple plants grew on the property, along with papayas, mangoes, guava, tree grape, Tahitian limes, and other delectable fruits. The flowers are beautiful and were used to dress the plates for morning breakfast. I bring to you some of the recipes I created in Hawaii. One of our favorites is Kokoke Lani French Toast a la Grand Marnier, but that is only the beginning. A love of cooking began as soon as I could see over the counter in the kitchen...preparing and presenting wonderful breakfasts for our guests is something I thoroughly enjoy. Terry and I live at Mrs. B's, this is our home as well as the B&B Inn we run. Together we share a love of meeting people and providing them a place to relax and unwind after a day of bicycling, tubing, canoeing, kayaking, fishing, shopping or birding. All of these things and so much more, are available here in beautiful Lanesboro.

We have attempted to create garden areas wherever we have a place that something would grow, and even in places that would not allow for ground planting...we have used pots to create green areas with succulents and flowering plants as well. The garden is always a work in progress. You can see it below and will find Taro, (Elephant Ear) growing there. Some types of this plant are used to make poi in Hawaii. The leaves can grow up to 5' wide. Very beautiful and as close to tropical as we could get. We have also planted some lovely different kinds of grasses below...in keeping with the natural rivers edge. The Zen garden is a space for contemplation and nature watching. Watch the birds, listen to the music of the river and the kakei fountain. We ask that you do not take food or drink into this part of the garden. The two lower levels of the garden have seating you may use (we also have outside decks with chairs and tables for enjoying snacks and drinks.) We do not use poisons on our plants. Keeping the garden organic means you are not ingesting poisons on your food. Of course the entire garden, Inn and surrounding property are completely smoke free.

Please take a moment or two to enjoy the garden while staying at Mrs. B's Inn. Not only is this a peaceful place, but during times when the flowers are blooming, we have many butterflies as well as lots of nesting birds and water birds...ducks and Herons. It is a birder's paradise.

Nestled in a deep valley of the Root River, Lanesboro offers tourists invigorating outdoor activities, rich artistic experiences, unique shopping, a local winery, and fine dining. Besides receiving the Great American Main Street Award in 1998, Lanesboro was named one of 100 Best Small Art Towns in America by author John Villani and one of the 50 Best Outdoor Sports Towns by Sports Afield magazine. Outside magazine featured Lanesboro, Minnesota as one of the 20 Best Dream Towns in America to live and play!
A major attraction is the spectacular paved Root River State Bike Trail, winding 60 miles through the valley with Lanesboro at its heart. Excellent for biking, hiking, cross-country skiing and in-line skating, it runs along an abandoned railroad bed through high bluffs, forest lands and rolling fields. When not bicycling, a cool dip in the river with a tube can take you gently swirling down the river where you will almost surely see plentiful wildlife. Or perhaps your day might be spent in a kayak or canoe on this meandering river.
It is said that one day in Lanesboro is just not enough...don't miss the Amish Carriage rides and tours, the art gallery Cornucopia or a trip to the Farmer's Market.
