Join us for a captivating evening with Fabian Castel, Ojai Vineyard’s Assistant-Winemaker. The evening will begin with a presentation by Castel as hors d’oeuvres are passed throughout the mansion. Once seated in the Smokehouse Restaurant, a delectable six-course dining experience will follow, masterfully prepared by Executive Chef Spencer Wolff. Each course will be expertly paired with Ojai’s fabulous wines. 

Wine Dinner Pricing - $125 Per Person

Ojai Vineyards

The Ojai Vineyard began in 1983 with the dream of producing distinctive California wines using traditional winemaking practices learned in Burgundy and the Rhone Valley. Twenty-eight years later, the Ojai Vineyard, owned by Adam & Helen Tolmach, works closely with a dozen different vineyards on the Central Coast of California and produces wines from syrah, grenache, mourvedre, pinot noir, chardonnay, sauvignon blanc and viognier. The vineyard produces close to 6,000 cases per year, divided between 15 bottlings, most of which are vineyard designated wines. 

The key to Ojai’s success in producing special wine is in the care taken growing the grapes. There is an inverse relationship between quantity and quality when it comes to grapes. Rather than purchasing by the ton, Ojai has long term agreements with their growers to purchase fruit by the acre. This allows for them to culture the vines and thin the crop to their strict specifications, yet allows the grower to receive a fair return. 

In the winery, Ojai likes to watch the development of the wine carefully, yet prefer to do as little as possible. Experience has taught them that the least amount of moving, pumping, fining and filtering is always best. Their ultimate objective is to show off the distinctive character of a vineyard site. 

Fabien Castel, Assistant Winemaker

Fabien Castel has been Adam Tolmach’s assistant winemaker at Ojai Vineyard for the past 13 years. Having grown up in Paris, his relation to wine was visceral as in France wine is part of everyday life from an early age to adolescence and into adulthood. Living in Europe, he grew up being exposed to many different types of wine but never had any formal training until he made his way to California and The Okai Vineyard. It was at Ojai that he became encaptured with the intricate craft of viticulture and winemaking, and under Adam’s guidance he discovered the multiple terroirs and climates of California’s Central Coast, resulting in his resolution to follow Adam in his never ending quest to celebrate Ojai’s unique geographical location. This quests espouses old-world winemaking techniques and sesibility, with the goal being to retain the texture and warmth of California grapes while adding a sense of elegance and freshness found mainly in European wines. Having been a pivotal part of The Ojai Vineyard now for more than a decade, Febien is singularly qualified to share and make relatable the wines of The Ojai Vineyard.

In the morning, you’ll awake to a continental breakfast tray delivered outside your door with freshly baked muffins, morning newspaper and your choice of coffee or tea followed by a country-style served breakfast in the Mansion from 8:30 AM to 10 AM.

With the winter season quickly approaching, plan your escape to the comfort of Antrim 1844 for a romantic wintertime getaway. Enjoy moments of another time, surrounded by historic ambiance with guestrooms elegantly adorned with antiques and fine furnishings. Begin your afternoon with tea starting at 4 PM in the Mansion, lavishly decorated in holiday splendor. In the evening, you’ll be treated to a half-hour of hand-passed hors d’oeuvres in the drawing rooms, each boasting the warmth of a wood-burning fire in twin marble fireplaces. You’ll then be seated for a six-course dining experience in Antrim’s renowned restaurant, expertly prepared by Executive Chef Spencer Wolff. While dining, choose from one of the 2,600 selections of wine representing the over 19,000 bottles of wine throughout the property. As you end the evening, stop by the Pickwick Pub to enjoy a delightful nightcap, basking by the warmth of the open fire.

In the morning, you’ll awake to find a breakfast tray outside your door, with freshly-baked muffins, a morning newspaper and your choice of coffee or tea. Then make your way to the Mansion for a full country-style served breakfast in the Mansion from 8:30 to 10:00 AM before you return to the real world relaxed and refreshed…
