Angel Thebe Pie
4 egg whites
1 cup granulated sugar
1/4 tsp cream of tartar
1/2 tsp vanilla
Beat egg whites until stiff. Beat in cream of tartar and sugar a spoonful at
a time. Beat in vanilla drop by drop and continue beating a few minutes.
When stiff, spread in a buttered 9" pie plate, heaping the mixture higher around
the edge of the plate.
Bake 10 minutes at 275 degrees, then 30 minutes longer at 250 degrees. If desired,
spread with 1/2 cup heavy cream whipped and let stand several hours or
overnight.
Cover with crushed sweetened strawberries and whipped cream or ice cream.
