Gourmet Cuisine

Our dining room is the perfect place to relax and unwind. The ambiance is warm and comforting, and the setting is perfect for lively conversation and hearty meals. Our executive chef prepares elegant cuisine featuring ample portions of traditional favorites. We offer a wide variety of meal, break, and beverage options to meet all our guests’ needs, prepared and served with just the right touch and in just the right setting. Following a good meal, guest often adjourn to the Stone room, where a humidor stocked with premium cigars awaits them. Our Dining Room

Carmac Falls Below is a small sampling of our breakfast, lunch, and dinner entrees, as well as our scrumptious desserts.

Breakfast

Robust Continental
An assortment of hot and cold cereals, fresh fruit, homemade muffins and biscuits with honey butter, toast, fresh bagels with cream cheese, croissants, cinnamon rolls and doughnuts, plain and fruit yogurt. Served with a variety of juices, low fat milk, coffee and hot tea selection.

Southern Sampler
A traditional Southern breakfast of buttermilk biscuits, saw mill gravy, scrambled egg casserole, pancakes with all the toppings, creamy cheddar grits, home fried potatoes, bacon, sausage, Tennessee country ham, sliced tomato and Southern fried apples.


Lunch

Mediterranean Chicken Salad
Balsamic, garlic marinated chicken breast pan seared and sliced. Served warm over mixed fresh salad greens with artichoke heart, black olive, tri-colored bell pepper, sun-dried tomatoes, red onion, and cucumber. Garnished with toasted pine nuts and feta cheese. Accompanied by grilled pita bread, tzatziki dip and balsamic vinaigrette dressing.

Fiddler's Steak and Cheese
Thin, tender slices of slow roasted prime rib of beef, served on a French roll. Topped with sauteed mushrooms, onion, pepper and melted provolone cheese. Accompanied by a mixed green salad with a horseradish blue cheese dressing.

Vegetarian Wrap
Soft, flour tortilla, rolled with hummus, sauteed wild mushrooms, sun dried tomato, artichoke hearts, roasted red peppers and baby spinach. Served with a tzatziki sauce and tabbouleh salad.

Smoky Mountain Baby Back Ribs
A half slab of tender baby back ribs, braised slowly and finished with a smoky, sweet barbecue sauce. Served with potato salad and pepper jack corn muffins. Accompanied by lots of napkins.


Dinner

Edgar's Stuffed Chicken
A boneless, skinless chicken breast rolled with a stuffing of apples, leeks, dried apricots, raisins and cubed bread. Flavored with brown sugar, cinnamon and cloves. Breaded, baked and served with a cranberry relish. Accompanied by roasted garlic, rosemary new potatoes and baby carrots.

Highland Filet
A 7oz USDA Black Angus beef tenderloin, bacon-wrapped, seasoned and pan seared to order. Served with roasted garlic whipped potatoes and sautéed shiitake mushrooms. Garnished with crumbled stilton cheese.

Cold Water Lobster Tail
Canadian, cold water lobster tails, oven broiled and served with drawn butter and lemon. Accompanied by saffron boiled new potatoes and fresh vegetables.

Eden's Mushroom Strudel
Shiitake, portabella and button mushrooms sautéed with garlic. Combined with parmesan cheese and breadcrumbs. Wrapped in puff pastry, baked and then sliced. Served with an herbed tomato cream reduction and fresh vegetables.

Desserts

Fudge Pie
Rich homemade chocolate fudge pie, served with a scoop of vanilla ice cream. Garnished with white chocolate sauce.

Key Lime Pie
Key lime pie made with real key lime juice and topped with whipped cream. Garnished with fresh lime.

Bread Pudding
Traditional vanilla, cinnamon flavored custard, baked with cubed bread. Served warm with a rich caramel sauce.

Maple Walnut Pie
Maple flavored walnut filling inside a flaky piecrust. Served with a berry coulis and chocolate mint whipped cream.

Pumpkin Spice Creme Brulee
Rich pumpkin flavored custard, served chilled with caramelized sugar.

Chocolate & Baileys Soufflé
Chocolate flavored soufflé, baked to order and served with a Bailey's creme anglaise.

Cheesecake
Cheesecake slice topped with a warm chocolate ganache, caramel sauce and whipped cream.

White Chocolate Eclair Cake
Smooth white chocolate mousse layered with pate choux pastry in a graham cracker crust.

Granny Smith Apple Cake
Fresh Granny Smith apples baked into a moist spice cake and served with a warm crea m cheese frosting.
