Curried Red Lentil Soup
Serves 10-12

6 cups chicken broth
4 cups water
1 onion chopped coarsely
1 lb bag red lentils
2 tbs olive oil
1/2 to 1 tsp curry powder depending on taste

Mix first four ingredients in stockpot and bring to boil, simmer partially covered for 40-45 minutes. Puree with stick blender until smooth. Mix in olive oil and curry powder. Puree again. Cool and divide into containers. May be frozen.
