Roasted Pancakes

Ingredients:
1 Tablespoon unsalted butter
2 eggs
1 C milk
1 C unbleached flour unsifted
1/4 tsp salt
1/4 C confectioners sugar
Fresh fruit

Preheat oven 450. Place butter in 10 inch pan and warm for 5 min. or until it melts. Coat pan completely with butter. In a mixing bowl, beat eggs and milk. Add flour and salt, beating with wire whisk until batter is smooth. Pour batter into quiche pan and bake 15 min. Reduce heat to 350 and bake additional 7 minutes.

 

Topping:
1/2 stick butter
2-3 C fresh fruit
juice of 1 lemon
1/2 C brown sugar
1/2 tsp cinnamon
1//4 tsp nutmeg
1/2 C slivered almonds

In medium sauce pan melt butter and add all ingredients except almonds. Stir over medium heat until fruit is soft and well coated. Serve over panckaes, top with almonds and powdered sugar.
