Red Velvet Pancakes with Kicked Up Cream Cheese Topping

5After a romantic evening at White Tail Ridge B&B, wake up to a melt-in-your-mouth breakfast that will keep you revved all morning!
Ingredients
- - Pancakes:
- 1 1/2 c Flour
- 1/4 c Unsweetened cocoa
- 2 T Sugar
- 1/3 c Powdered sugar
- 1 1/2 t Baking powder
- 1/2 t Baking soda
- 1 t Cinnamon
- 1 t Salt
- 1 1/2 c Buttermilk
- 2 Lg eggs
- 1 t Vanilla
- 2 T White vinegar
- 1 T Red food coloring
- 1/4 c Butter, melted
- - Topping:
- 1 8 oz pkg cream cheese, softened
- 1/4 t Lemon juice
- 1 c Powdered sugar
- 1/4 c Ricotta cheese
- 1/2 t Vanilla
- 1 T Strong brewed coffee
- 1/2 t Rum (opt'l)
Directions
Pancakes:
1. Mix all dry ingredients in a lg bowl, whisking thoroughly.
2. In a separate bowl, thoroughly mix buttermilk, eggs, vanilla, vinegar, & food coloring. Make a well in the center of the dry ingredients & add the buttermilk mixture. Fold in the melted butter.
3. Pour batter in 1/4 c measurements onto hot skillet.
4. Serve with Kicked-up Cream Cheese Topping.
Topping:
1. In a med bowl, whip cream cheese & ricotta until smooth.
2. Add remaining ingredients & mix smooth.
3. Serve a dollop on each pancake.
