Red Velvet Pancakes with Kicked Up Cream Cheese Topping

After a romantic evening at White Tail Ridge B&B, wake up to a melt-in-your-mouth breakfast that will keep you revved all morning!

Ingredients

  • - Pancakes:
  • 1 1/2 c Flour
  • 1/4 c Unsweetened cocoa
  • 2 T Sugar
  • 1/3 c Powdered sugar
  • 1 1/2 t Baking powder
  • 1/2 t Baking soda
  • 1 t Cinnamon
  • 1 t Salt
  • 1 1/2 c Buttermilk
  • 2 Lg eggs
  • 1 t Vanilla
  • 2 T White vinegar
  • 1 T Red food coloring
  • 1/4 c Butter, melted
  • - Topping:
  • 1 8 oz pkg cream cheese, softened
  • 1/4 t Lemon juice
  • 1 c Powdered sugar
  • 1/4 c Ricotta cheese
  • 1/2 t Vanilla
  • 1 T Strong brewed coffee
  • 1/2 t Rum (opt'l)

Directions

Pancakes:

 

1.  Mix all dry ingredients in a lg bowl, whisking thoroughly.

2.  In a separate bowl, thoroughly mix buttermilk, eggs, vanilla, vinegar, & food coloring.  Make a well in the center of the dry ingredients & add the buttermilk mixture.  Fold in the melted butter.

3.  Pour batter in 1/4 c measurements onto hot skillet.

4.  Serve with Kicked-up Cream Cheese Topping.

 

Topping:

 

1.  In a med bowl, whip cream cheese & ricotta until smooth.

2.  Add remaining ingredients & mix smooth.

3.  Serve a dollop on each pancake.
