Basic Cookie Mix

Basic Cookie Dough

1 cup (2 sticks) butter or margarine
1 1/2 cups sifted confectioners sugar
1 egg
1 tsp vanilla extract
1/4 tsp salt
2 1/2 cups flour
1 tsp baking soda
1 tsp cream of tartar

Using an electric mixer, cream butter and gradually add sugar. Add unbeaten egg and vanilla; beat well. Sift dry ingredients and gradually add to creamed mixture. Prepare cookies in any variation you prefer. Chill dough overnight. All varieties cook in a preheated 350 degree oven. There is no need to grease pans for any of these.

Butter Crispies: Chill dough. Roll on well floured pastry cloth to 1/8 in. thickness. Cut with floured cutter. Place on cookie sheet 2 inches apart. Bake about 6 minutes.

Snow Balls: To half of the cookie dough, add 3/4 cup of ground walnuts. Chill. Roll dough into size of large marbles. Place on cookie sheet, 2 inches apart. Bake 8 to 10 Min. Roll at once in confectioners sugar. Cool. Roll again in sugar. Makes about 2 1/2 Doz.

Trixie Treats: Chill half the dough; mold into balls the size of walnuts. Roll the balls into a mixture of 2 tablespoons sugar and 1 teaspoon cinnamon. Place on cookie sheet 2 inches apart. Bake 8 to 10 minutes. Makes about 2 1/2 Doz.

Chocolate mint creams: To half the dough add 1 square unsweetened chocolate, melted and cooled. Form dough into a log 2 inches in diameter. Wrap in waxed paper and chill. Slice and place on cookie sheet 2 inches apart. Bake 8 to 10 Min. Sandwich with mint cream filling (below). Makes about 1 1/2 Doz.

Mint cream filling: Cream 2 tablespoons butter, 1 cup sifted confectioners sugar, 1 tablespoon cream, 2 drops mint flavoring (oil of peppermint).
