Apple PancakesFrom WHISPERING PINES BED & BREAKFAST
- 2 1/2 cups flour
- 4 tsp baking powder
- 2 tsp sugar
- 1 tsp salt
- 1 tsp baking soda
- 2 eggs, room temperature
- 2 1/2 cups buttermilk, room temperature
- 3 T. butter, melted and cooled
- 2 medium Granny Smith appples, diced
- 1 - 2 tsp cinnamon
Sift together the first 5 ingredients. Combine eggs, buttermilk and butter. Fold into dry ingredients. Do not over mix. Coat the apples with cinnamon and fold into batter.
Cook on hot griddle and serve with warm maple syrup.
