Zucchini Bread
From TUCK INN BED & BREAKFAST
4 eggs 1 cup oil 1 tsp salt 2 tsp cinnamon 1 1/2 tsp vanilla 2 cups grated zucchini 2 cups sugar 3 1/2 cups flour 1 1/2 tsp baking soda 3/4 tsp baking powder 1 cup walnuts (optional) 1 cup raisins (optional) Cream eggs, sugar, oil and vanilla. Add dry ingredients and mix well. Stir in zucchini, nuts and raisins. Bake @ 350 for 1 hour in greased and floured pans. Makes 2 large loaves. |
