1# ground pork **sausage
1 c. diced onion
1 c. grated American cheese (or your choice of meltable cheese)
2 eggs (beaten)
1 c. milk
1/2 c. all purpose baking mix (Bisquick)

Brown and drain sausage and onion. Layer in greased 9 inch pie pan. Top with the grated cheese.

Beat eggs, milk, salt and baking mix well. Pour over the meat/cheese mixture. Bake at 400 degrees for 25-30 minutes until inserted knife comes out clean.

*Garnish each piece witha drizzle of salsa, a small spinach leaf and a dollop of sour cream.
**Vegetarian substitute - lightly salt and steam 2-3 c. broccoli flowerettes. Drain and combine with sauteed onions.
