Baked Eggs Florentine

From TIMMERMANN HOUSE BED & BREAKFAST
Ingredients:
6 oz. creamed spinach
2 TBLS chopped red pepper
4 slices ham
1/2 cp. chopped water chestnuts
4 eggs
1/8 tsp. ground nutmeg
salt & pepper
1/2 cp.shredded Monterey Jack

Preheat oven to 400. Microwave spinach on high 5-6 min. Grease 4 baking dishes, place a piece of ham in each. Divide spinach in each dish making an indentation. Sprinkle water chestnuts and carefully break egg in each dish. Season with nutmeg, salt & pepper, sprinkle cheese, bake until egg is baked.
