Herb Cheese Omelet
From THURSTON HOUSE BED & BREAKFAST
Ingredients:
4 eggs
3/4 cup flour
2 cups milk
1/2 cup shredded cheese (can also add 1/2 cup cubed ham or bacon)
basil to taste

Whisk eggs and flour together until mixed well. Add milk and whisk until well combined. Spray Pam in a 10" or 12" cast iron skillet. Sprinkle basil and cheese in skillet. Pour egg mixture over. Bake in a 400° oven for 30 minutes, or until puffed and brown on top. Cut in sections and serve warm.
