Super Natural Bran Muffins

From SUNRISE FARM BED & BREAKFAST
1 cup whole bran cereal (not flakes)
1 cup boiling water (plus extra for softening raisins)
1/2 cup canola oil
1/2 + 1/8 cups firmly packed Splenda brown sugar blend
1/4 cup honey
2 eggs
2 cups non-fat buttermilk
2 1/2 cups whole wheat flour
2 1/2 tsp baking soda
1 tsp fine sea salt
2 cups granola
approx. 1 cup raisins
1/2 - 1 cup walnuts

In a large bowl combine the bran and water, and let stand for 10 minutes. In another bowl pour enough boiling water to cover raisins, and let stand for 5 minutes. Then drain and pat dry with paper towels.

In a medium bowl combine the flour, soda, and salt with a whisk.

Add the oil, sugar, and honey to the bran, and mix well. Beat in the eggs. Add the buttermilk and then the flour mixture and remaining ingredients. Cover and refrigerate for several hours or overnight. (The batter can be frozen or kept in the refrigerator for up to 4 weeks.)

Spoon/scoop into greased muffin cups.

Bake in a 400 deg. oven for 19-20 minutes.

MAKES, 3-4 DOZEN REGULAR SIZE MUFFINS.
