French Toast

From STRAWBERRY CREEK INN BED & BREAKFAST
A favorite recipe... Jim fixes it often! It's especially easy to serve a lot of people. Bake it in the oven on cookie sheets instead of cooking a few pieces at a time on a griddle.

Ingredients:
6 eggs separated
4 C 2% milk
rind of two lemons or 2 TBSP of prepared lemon rind
12 slices of day-old French bread, one inch thick
Three C unseasoned bread crumbs
1/2 C cinnamon/sugar mixture
4 to 5 Tart apples (Granny Smith) cored, peeled and thinly sliced
3 TBSP lemon juice
Maple syrup
Smoked bratwurst or similar breakfast meat if desired

Directions
In a large bowl combine milk, egg yolks and lemon rind, mix well. Soak bread slices in this mixture until thoroughly wet but not soggy (about 10 seconds for each slice). Dip soaked bread slices in egg whites and then coat with bread crumbs. Place slices on a slightly greased cookie pan and bake at 400 degrees for 15 minutes, or until lightly browned.

Meanwhile place cored, peeled and sliced apple in pot, cover with water, add lemon juice and bring to a boil and simmer for about 5 minutes.

To serve, place two slices per plate, lightly sprinkle with cinnamon/sugar mixture, top with apple slices and serve with maple syrup and smoked bratwurst or similar breakfast meat. Serves 6 people.
