Chicken Cognac

Here is an interesting chicken recipe that could be the makings of a romantic Valentine's Day Dinner for someone special.

4 chicken breasts
1/2 cup milk
1/2 cup Bisquick (or similar baking mix)
1/2 t. salt
1/2 t. minced garlic
1/2 t. Paprika
1/2 cup thinly sliced green onions
2 T. butter
1 egg yolk
1/2 cup light cream
1/2 cup cognac

Preheat oven to 425 degrees. Dip chicken breasts in milk and drain. Combine Bisquick, salt, garlic and paprika. Coat chicken with mixture and place skin side down in a greased (vegetable oil spray) baking dish. Bake for 30 minutes or until tender. Keep warm. Saute onion in butter until tender. Beat egg yolk with cream and stir into onion. Cook over low heat, stirring constantly, until thickened. Heat cognac in a small saucepan until just hot (do not boil). Pour over chicken and ignite. When flame dies, pour hot sauce over chicken and serve immediately. Makes 2-4 servings.
