Green Chile StrataFrom ADOBE AND STARS BED & BREAKFAST INN
3, 10 inch Flour Tortillas
3 cups Grated Monterrey Jack Cheese
1 cup Grated Medium Cheddar Cheese
1 13 ounce carton Bueno Mild Frozen Green Chili or Drained Chopped Hatch Canned Green Chile
2 1/2 cups Milk
1 Tsp Salt and 1/2 Tsp Pepper
Butter 10 x 12 Pyrex casserole and over the bottom with a single layer of tortillas. Mix cheeses together and put 1/2 cheese and 1/2 chilis. Beat eggs, milk salt and pepper and pour over. Let sit in refrigerator overnight. Bake at 350 degrees for 45 minutes then 250 for 15 minutes. Strata is done when firm to touch. Let sit 5 minutes. Garnish and serve. You may add finely chopped ham or bacon to taste. Use sour cream with chives or ripe olives for garnish.
