Roasted Potatoes

This dish is wonderful as the main course or side


1/8 C olive oil or melted butter

4 large baking potatoes, peeled and cubed

1 C cubed ham (optional)

1/2 C diced bell peppers

1/2 C diced sweet onions

Herb mixture

1 Tbs minced garlic

1/2 tsp bouquet garni

1/2 tsp salt

1/2 teaspoon pepper

1/4 tsp lemon pepper

2 tsp paprika

Directions

 

Preheat oven to 350 F degrees

 

Place potatoes, (optional ham), bell pepper, and onion in large bowl and coat with oil or melted butter. Stir together herb mixture in small bowl. Gradually add herb mixture to ham and veggie mix. Pour mixture in a shallow 2-qt baking pan. Sprinkle with paprika. Bake, uncovered at for 45-60 minutes or until potatoes are tender.
