Royal Mango Breakfast Bread

We vary the stuffing in this favorite dish, but more guests seem to enjoy the mango surprise...

1 mango sliced
4 eggs
1/4 c. cream
4 slices homemade bread-1" thick
1 1/2 c. dried bread crumbs
1 tsp. cinnamon
vanilla

Combine eggs, vanilla, cream well. Cut each slice of bread on diagonal and then slit open on the cut side a pocket...Fill with a slice of mango...Dip bread in egg and then into bread crumbs with cinnamon added. Let rest on saran wrap while preparing other parts of breakfast...When needed, heat oil and butter to 1/4 inch in skillet and fry bread to golden. Serve with warm maple syrup on the side and dusted with powdered sugar. Serves 4.
